Origin

Extra virgin olive oil obtained from the Cerasuola cultivar, an authentic expression of Western Sicily (Trapani area and the Belìce Valley).

Harvesting

Hand-harvested olives are cold-pressed within hours of picking to preserve polyphenols and their full aromatic profile.

Storage

The oil is then stored under nitrogen in temperature-controlled stainless steel silos, ensuring lasting freshness and integrity over time.

Flavour

Bold in character, it opens with an intense green fruitiness, layered with elegant notes of fresh-cut grass, tomato, and artichoke. On the palate, it is harmonious and persistent, with a lively balance of bitterness and peppery spice that enhances its distinctive personality.

Pairings

It elevates vegetables, legumes, and meats; It brings natural authority to more structured preparations, adding depth and a distinct identity to every dish.

Peppery

Got my second Cerasuola and I’m hooked! That peppery tingle in the throat is exactly what I look for. If it doesn’t tingle, it ain’t an extra virgin! Hope it gets to my joints!

I can handle it

I wanted to try the most intense-flavoured olive oil to see if I could handle it. It actually tastes very nice, and the green colour is mesmerising. You can see the real deal, which you can’t get in stores.
